Green Onion & Ricotta Cornbread

Serves up to 16
Prep Time: with baking, about 45 minutes

½ cup vegetable oil
2 cups self-rising yellow corn meal mix
1 1/3 cups milk
2 eggs
2 tablespoons sugar
¾ cup ricotta cheese
2 bunches green onions, thinly sliced, about 2 cups

Preheat oven to 400 degrees

In a large bowl whisk together the oil, corn meal, milk, eggs, sugar, cheese and onions. Coat a loaf or cake pan with vegetable oil spray and pour in corn meal mixture. Spread evenly in the pan, and bake for 30 minutes, until golden or a toothpick inserted into the center comes out clean.
