Annie’s Amazing Apple Cake

Serves: 10
Prep Time: With baking time, approximately 1 hour and 10 minutes

2 cups granulated sugar
3 cups unbleached all-purpose flour
1 ½ cups canola oil
2 extra large eggs
2 teaspoons pure vanilla extract
3 medium apples, peeled, cored and diced, about 3 cups
1 (2-ounce) package walnut pieces, about 1/3 cup
1 ½ cup raisins
1 teaspoon baking soda
1 teaspoon coarse salt
1 teaspoon ground cinnamon

Preheat oven to 350° .

Grease a 12-cup Bundt pan and set aside. In a large mixing bowl, combine sugar, oil, eggs and vanilla. Add flour, baking soda, salt and cinnamon and whisk until smooth. Fold in the apple pieces, raisins and nuts.
Spoon the cake batter into the Bundt pan and bake in the oven at 350° until a toothpick inserted in center comes out clean about 50 to 55 minutes.  

Cool in the pan on a wire rack and serve slightly warm, or at room temperature.
