Pepper Baked Squash

Serves: 5
Prep Time: 35 minutes

6 medium yellow squash, sliced, about 5 cups
1 medium white onion, peeled and chopped, about 1 cup
3 tablespoons olive oil
1 teaspoon coarse salt
1 teaspoon coarse ground black pepper
2 teaspoons red pepper flakes

Preheat oven to 375 degrees

Arrange slices of yellow squash and onion in a large baking dish. Toss olive oil into the vegetable mixture and sprinkle with the salt, pepper and red pepper flakes.

Bake for 30 minutes uncovered.
