Nana’s Quick Quiche


2 extra large eggs
1 cup milk
4 ounces grated Mozzarella cheese, about 1 cups
3 ounces Feta cheese, crumbled, about ¼ cup

½ medium white onion, peeled and chopped, about ½ cup
8 ounces spinach leaves, about 2 cups

1 frozen pie crust

Preheat oven to 400 degrees

In a large mixing bowl, combine the eggs, milk, mozzarella and feta. In a pan over medium heat, sauté the onion and spinach leaves, about 5 to 8 minutes. Add the cooked spinach and onion to the eggs, milk and cheese. Stir until the cheese melts into the mixture.

Pour the mixture into a pie shell and bake for 30-35 minutes, or until crust is golden and toothpick inserted into center and comes out clean.

Important note: Simply double up on ingredients and cook 15 minutes longer to bake 2 pies at once!
