Golden Raisin Dressing for Poultry


Serves up to 6 people, with plenty left over
Preparation time: about 30 minutes, plus baking

1 large yellow onion, chopped (about 2 cups)
4 stalks celery, chopped (about 4 cups)
1 stick butter
1 store bought bag of stuffing cubes (any Pepperidge Farms flavor works nicely; try herb!)
1 can cream of celery soup
1 can cream of mushroom soup
1 cup chicken broth
1 cup golden raisins
1 tablespoon butter, additional, cut into small pieces

Preheat the oven to 350 degrees.

In a large sauté pan cook the onion and celery in the butter over medium high heat. Cover the pan and simmer until the vegetables are soft, about 20 minutes.

In a large bowl combine the stuffing cubes, soups, and cooked vegetables mixture.

Stir until all the cubes are moistened.

Add as much chicken broth as needed to reach the desired stuffing consistency. Toss in the golden raisins and blend together.

Prepare a baking dish by coating it in vegetable oil spray. Spoon the stuffing into the dish.

Dot the top of the stuffing with butter pieces. Bake for 30 to 35 minutes until cooked through and golden brown on top.
