Homemade Caramel Sauce

1 cup water
1 ½ cups sugar
½ cup heavy cream

In a saucepan combine the water and sugar over high heat and bring to a boil.

Continue cooking until the sugar dissolves and begins to darken to a caramel color.

Very carefully add the cream to the hot mixture. It will bubble up instantly. Continue to stir until the sauce begins to thicken. Reduce the heat and keep warm.
