Home Made Cinnamon Waffles

Preparation Time: 30 minutes

2 cups cake flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
4 large eggs, separated
1 tablespoon honey
¼ cup butter, melted (1/2 stick)
1 teaspoon vanilla
2 cups milk

Heat a waffle iron that has been sprayed with vegetable oil spray.

Whisk together the flour, baking powder, cinnamon, nutmeg and salt in a large bowl.

Stir in 4 egg yolks (reserving the egg whites into another bowl), honey, melted butter, vanilla and milk.

Use an electric mixer to whip the egg whites until soft peaks form. (You can do this by hand if you are in the mood for a good workout!)

Fold the egg whites into the batter. Pour in enough batter to cover about ¾ of the griddle’s surface. Cook until the indicator light shows that the steam has escaped and the waffle is cooked. Hold waffles on the middle rack of an oven set on low heat.

Serve the waffles with fresh sliced fruit and warm maple syrup.
