Fried Tilapia Fingers

Servings: 4
Preparation Time: 30 minutes



1 ½ pounds tilapia (or other firm, white fish), cut into 1-inch strips
Salt and freshly ground pepper
2 cups flour
1 tablespoon baking powder
½ teaspoon Old Bay Seasoning
1 (12-ounce can) beer
Canola oil
Cornstarch

Season the fish with salt and pepper.
Whisk together the flour, baking powder and old bay seasoning in a bowl.
Whisk in the cold beer until the batter is smooth. Refrigerate the batter for at least 15 minutes and up to 1 hour.
In a deep pot, heat canola oil at 350 degrees.
Dredge the fish pieces into the cornstarch. Shake off excess. Dip into the batter. Carefully drop into the hot oil. Cook until golden brown, turning once, about 2 to 4 minutes. Drain on a rack over paper towels.
