Crispy Hash Brown Potatoes


Servings: 4
Preparation Time: 15 minutes plus 1 hour baking and at least 1 hour chilling

2 large baking potatoes
2 tablespoons butter
2 tablespoons olive oil
1 medium white onion, diced (about 2/3 cup)
Salt and freshly ground pepper

Preheat the oven to 400 degrees.

Wash and dry the potatoes. Use a fork to poke several holes in each one. Bake until the potatoes are soft, about 1 hour. Cool to room temperature. Refrigerate until cold, at least one hour or overnight.

Peel the potatoes and cut into ½-inch dice.

Heat the olive oil and butter in a skillet over medium high heat.

Cook the potatoes and onions in the skillet until crispy brown. Use a spatula to turn over crisp pieces. Season with salt and pepper.
