Easy Marinated Veggie Snacks

Yield: 6 snacks
Serving Size: 1 packet of veggies (about 1 cup)

1 bunch broccoli, cut into florets (about 2 cups)
1 large head cauliflower, cut into florets (about 2 cups)
8 ounces button mushrooms, sliced (about 2 cups)
¼ cup white wine vinegar
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic powder
Salt and freshly ground pepper

Blanch the broccoli and cauliflower in boiling water, until just crisp tender, about 5 to 8 minutes. Place the veggies into ice water to stop the cooking process. Pat dry.

Place the broccoli and cauliflower into a bowl. Add the mushrooms.

I a small bowl, whisk together the vinegar, mustard, oregano, basil and garlic powder. Slowly whisk in the olive oil. Pour this mixture over the vegetables and toss. Season with salt and pepper. Divide the coated veggies into 6 plastic bags. Store in the refrigerator for up to 4 days.
