Golden Potato Cakes with Ham

Servings: 4
Preparation Time: 15 minutes plus 30 minutes potato baking and at least one hour potato chilling

2 large Yukon gold potatoes
1 medium sweet potato
¼ pound baked ham, cut into ¼-inch dice
1 bunch (6 to 8) green onions, chopped (about ½ cup)
½ teaspoon dried thyme
1 large egg, beaten
Salt and freshly ground pepper
2 tablespoons butter
2 tablespoons olive oil

Preheat oven to 400 degrees

Wash and dry the potatoes. Use a fork to poke several holes in each one. Bake until the potatoes are just soft, about 30 to 40 minutes. Cool to room temperature. Refrigerate until cold, at least one hour or overnight.

Peel the potatoes. Grate the potatoes into a large bowl.

Add the green onion, ham, thyme and egg to the bowl. Season with salt and pepper.

Use your hands to combine the mixture and form into 4 patties.

Heat the butter and the olive oil in a skillet over medium high heat.

Cook the patties in the skillet until golden, about 4 to 6 minutes. Turn the patties and cook until golden on both sides, about 4 to 6 minutes more.
