Sweet Potato Apple Salad with Honey, Ginger and Mustard Dressing

Makes 6 Servings
Prep Time: 15 minutes
Cook Time: 10 minutes

For the dressing
½ cup honey
Juice of 3 medium limes (about ¼ cup)
¼ cup olive oil
1 (1-inch piece) ginger, grated (about 1 tablespoon)
2 tablespoons Dijon mustard
Salt and freshly ground pepper

For the salad
2 medium sweet potatoes, peeled and diced into 1-inch cubes (about 2 cups)
2 cups fresh pineapple, cut into 1-inch cubes
2 medium apples, peeled, cored and cut into ½-inch cubes (about 2 cups)
2 medium celery ribs, diced (about ½ cup)
1 cup finely chopped walnuts
12 ounces mesclun lettuce mix (about 4 cups)

Whisk together salad dressing ingredients in a small bowl. Season with salt and pepper.

Preheat the oven to 350 degrees. Place the potatoes onto a rimmed baking sheet that has been coated with vegetable oil spray. Cook until tender, about 8 to 10 minutes. Cool to room temperature. Toss together the remaining salad ingredients.

To serve, pour the dressing over the salad, toss and season with additional freshly ground pepper.
