Makes 4 servings
Prep Time: 5 minutes plus chilling

2 cups reduced fat cottage cheese
1/3 cup all natural sugar
2 teaspoons instant espresso powder
Zest of ½ small orange (about 1 teaspoon)
1 teaspoon pure vanilla extract
4 small amaretti cookies

Place the cottage cheese, sugar, espresso powder, orange zest and vanilla into the bowl of a food processor. Pulse to puree. Spoon into 4 wine goblets. Cover each goblet with plastic wrap and chill in the refrigerator for at least 1 hour and or overnight.

To serve, crush the cookies with a rolling pin. Remove goblets from the refrigerator and sprinkle cookies over the top.
