Oat ‘n Apple Waffles

Prep time: 10 minutes plus soaking the oats
Cook time: 15 minutes
Serves: 4
Serving Size: 2 4-inch waffle squares

2 cups buttermilk
2/3 cups old fashioned rolled oats
¼ cup apple juice
1 egg
2 tablespoons honey
1 cup whole wheat flour
1 ½ teaspoons baking soda
½ teaspoon salt
1 tablespoon canola oil
4 medium Granny Smith apples, quartered, cored, peeled and sliced into very thin slices
1 tablespoon honey
1 teaspoon ground cinnamon

Preheat a waffle iron
Stir together the buttermilk, oats and apple juice. Let stand for at least 1 hour, or cover and refrigerated overnight.

Stir in the egg, honey, flour, baking soda and salt.

Heat the canola oil in a skillet over medium heat. Add the apples. Sprinkle with honey and cinnamon. Stir until the apples are soft and golden.
Ladle the batter onto a waffle iron. Cook until the steam no longer escapes.

Serve the waffles with the warm apples.
